Sun Dried Tomato Flatbreads Serves: 6 6 large eggs 1/2 cup onion 2 tsp garlic 1 cup kale 1 cup sun dried tomatoes 1/2 cup cottage cheese 3/4 cup high protein flour 1/4 cup coconut flour ½ tsp baking powder 1/2 cup shredded cheese Salt and pepper Fry off the onions, garlic, kale & sun-dried tomatoes. I fried mine off in half olive oil half oil from the jar of sundried tomatoes. Mix everything else together then once cooled add the mixes together. Let sit for 5-10 mins to thicken up. Plum, Thyme & Honey Galette - one for the dinner table and soul. This is such a simple recipe, it tastes amazing and looks incredible! Plus it’s super colourful & we all know that this is the year of eating the rainbow, because the more colour in our diet the happier our gut feels! To make: The Crust: 1 1/4 cup all-purpose flour 1/4 cup sugar 1/2 teaspoon salt 145g unsalted butter, cut into cubes (really really really cold) 1 egg 1/3 cup ice water Plum & thyme filling: 6 to 8 tart plums pitted and sliced Drizzle of honey Sprinkle of cinnamon Fresh thyme (the first thing I’ve harvested from my garden 🥺🥺) First make your filling by mixing everything together in a bowl and setting aside. Careful when you mix the plums not to break them, you want them whole for the spiral. Then make your pastry, I used a food processor to make mine but you can also make by hand. Process your dry ingredients first, then add the cold butter and process until it’s like little bread crumbs (do not over mix). Then add your egg. Plus a little until combined and then slowely add your ice water until you get your pastry in a ball. Chill for at least 1 hour - sometimes I do this the day before if I’m really prepared. Then simply roll out your pastry in a circle, spiral or pour your peaches over the pastry and tuck up the edges. I brushed some of the honey from the peaches on the edges then popped in the over for 30 mins. I also added an egg wash 15 mins in and it was perfectly crispy.
